The cappings are harvested by hand. The frames are removed from the hives then transferred shortly after harvesting, in food-grade containers, to the extraction area.

The honeycomb is uncapped manually and the honey is extracted by centrifugation at room temperature, not heated, without fine filtration.

After natural decantation, the honey is put into jars. From approximately 10 kg of capped honeycomb, the average yield is between 6 and 7 kg, depending on the flora and the season.

Each honey comes from a single apiary at a specific time of the season, corresponding to the dominant flowering, in order to preserve the pure expression of each terroir.

Features

The dominant floral notes of Castanea sativa give this honey its deep amber hue. Darker and more intense than most honeys, it stands out with a herbaceous and woody aroma, evocative of the forest—aromatic, resinous, and subtly strong.

Its flavor is rich and complex: earthy, spicy, and delicately tannic, with subtle notes of toasted wood or malt beneath a controlled sweetness. The bitterness, fine and measured, is balanced by a beautiful warmth and a persistent depth. The finish is long, marked by notes of spices, bark, and wild herbs.

This assertive honey, naturally rich in minerals, pairs perfectly with aged cheeses, rustic breads, or savory dishes.
