Our acacia honey is harvested in the heart of the fragrant acacia groves surrounding our estate. Pale and crystalline, with a delicate floral scent, it offers a light and pure sweetness, enhanced with subtle notes of vanilla, spring flowers, and fresh pollen, finishing with a clear and lingering aftertaste.

Naturally rich in enzymes and antioxidants, this honey naturally retains its liquid texture over time. It is ideally enjoyed with yogurt or fresh fruit, as an accompaniment to mild cheeses, or to delicately sweeten teas and infusions, without altering their aromas.

Harvesting, extraction and yield:

The cappings are harvested by hand, the frames are removed from the hives and then transferred shortly after harvesting, in food-grade containers, to the extraction area.

The honeycombs are uncapped manually and the honey is extracted by centrifugation at room temperature, without heating or fine filtration.

After natural settling, the honey is jarred. From approximately 10 kg of capped honeycomb, the average yield is between 6 and 7 kg, depending on the flora and the season.

Originating from carefully preserved acacia blossoms, this honey reveals the purest expression of Robinia pseudoacacia. Its very light colour hints at a profile of rare delicacy, carried by light floral notes, nuances of fresh nectar, and a subtle touch of beeswax.

The tasting reveals a crystalline and perfectly controlled sweetness. The aromas develop precisely around white flowers, discreet vanilla, and fresh honey, before stretching into an elegant, long, and silky finish. Thanks to its naturally high fructose content, it retains its fluid texture and remarkable clarity for a long time.
